🌱 Farming/Vinification: Organically grown on a schist-laden layer of dolomite-rich limestone bedrock, the vines for this rare vintage of sparkling Mondeuse were situated at an elevation of 2000’. Harvested late in the season, the grapes achieved the target sugar concentration (~19º Brix) in the last week of September or even early October. Hand-picked and whole-cluster pressed, primary fermentation occurred in neutral 227L barriques. Sparkling wine was produced on 26 July 2019, disgorged on 27 March 2021, and finished without dosage. A fortunate few can now uncork and savor the mere ~1050 bottles of this fine vintage.
