Grapes are harvested by hand. Wine undergoes spontaneous fermentation in stainless steel with indigenous yeasts and is then aged 4 months in stainless steel on lees. Secondary fermentation in the bottle. No fining, no filtration.

Francesco and Michela Cirelli
Francesco and Michela work as a team, both farming the land and making the wines. Francesco purchased the land in 2003 right after his graduation in Economics at a prestigious European university. Before this, he was a student at the Italian Navy College. He decided to dedicate himself to organic agriculture because of the profound values of working the land (“Right after God the farmer comes next” he was told once).
His favorite wine is his amphora-fermented wine, as they are truly artisanal containers. There is an obligation to only interact manually with the juice, using nothing other than your body. If you have to clean the vessel, you have to go inside it with your swim suit to clean the vessel. This makes for a more emotional process and requires more effort. It’s you and the clay vessel, that is all.
Trebbiano is widely planted across Italy and there are at least 6 different varieties of the grape including Trebbiano Toscano, Trebbiano Romagnolo, Trebbiano Giallo, Trebbiano Spoletino and Trebbiano Modense. However, Italy's most exciting Trebbiano, Trebbiano d'Abruzzo, is thought to not actually be a Trebbiano at all but probably the Bombino Bianco of Puglia, but this has yet to be proved by DNA profiling. This makes it highly likely that it is related to Trebbiano Spoletino. Trebbiano Spoletino was rescued from extinction by Cantina Novelli in Umbria at the beginning of this century.
Abruzzo is a mountainous region in entral Italy with a significant coastline on the Adriatic sea to the south of Marche and is a very important producer of wine. It is the seventh of Italy's highest producing regions, with total gallons in 2011 at 53 million. Abruzzo is particularly known for two varieties, Montepulciano and Trebbiano d'Abruzzo.
Agricola Cirelli is an organic farm certified by IMC (doc. n.3194 RV.01), surrounded by 23 hectares of land. All of its production is designed to respect the natural cycles of the olive trees, vineyards, horticultural crops and the animal breeding. The rotation of the crops, which allows the land to rest, the fertilization process and the grazing of the free range animals represent some of the most important phases in the production process of olive oil, wine, vegetables, fruit and meats of supreme quality.
The farm grows and produces in total respect of the organic agriculture. Nature sets the rules and it represents the core of every activity. The animal's interaction with the land guarantees a natural grazing and fertilization of the land, which means they do not have to use harmful chemical substances.
