Vinification: Cofermented pet-nat, spontaneous fermentation, dry less than one gram of sugar.
About the Winemaker: A surfer at heart, Claus Preisinger began producing wine on the shores of Lake Neusiedl in Gols, Burgenland in 2002. He switched to biodynamic practices in 2006, and is certified by Respekt Biodyn. His collection includes native grapes (Blaufränkisch, Zweigelt, Grüner Veltliner, St. Laurent) and Pinot Noir and Pinot Blanc from both sides of the lake. No cultivated yeast or sulfur dioxide is used, and many vintages are aged in amphorae instead of barrels -- a step back to the basics of grape and soil. Claus follows a philosophy of reduction, minimalism and liberation.
