Farming/Vinification: Organic farming. Traditional vinification with destemming and soft pressing. The clean juice is fermented in stainless steel tanks with controlled temperature which maintains the good flavor and aroma.
Region: Bethlehem, West Bank
Notes: Grown mostly in the area around Bethlehem and Hebron in Palestinian territories, the vineyards are located at 2600 ft of altitude. This cooler micro-climate ensures longer hang-times, more controlled ripening and an overall better structure of acids/sugars in the grapes.
