Grapes are harvested by hand from 20 year old vines grown on clay and limestone soils. Direct press, then spontaneous fermentation in stainless steel with indigenous yeasts, followed by aging in stainless steel, sur lie. Not fined or filtered

Distillerie Cazottes is an organically farmed artisanal distillery located in Tarn in Occitanie. Laurent makes exceptional eau de vies for which he is well known. He also makes gorgeous wines from local grapes Mauzac, Braucol, Prunelart, and Duras. His wines, like the eau de vies, are farmed biodynamically and treated with great care. Just honest, well-made, and well-priced wines for everyday drinking.

100% Mauzac

Mauzac or Mauzac blanc a white variety of grape used for wine, of the species Vitis vinifera. It is mainly grown in the Gaillac and Limoux regions in the southwest of France. Total French plantations of Mauzac stood at 7,900 acres in the year 2000.

Mauzac buds and ripens late, and was traditionally picked quite late, when temperatures had dropped in Limoux. This allowed for slow fermentation which preserved residual sugar for a "natural" second fermentation in the spring, creating a sparkling wine. Today, it is more common to pick Mauzac earlier, giving a more crisp wine with higher acidity, but also without much of its particular aromas.

Located just two hours from Barcelona, Occitanie is a combination of the neighboring Languedoc-Roussillon and Midi-Pyrénées regions, home to cities like Montpellier, Toulouse, and Perpignan. This is considered to be the true South of France—and one of the country’s best-kept secrets.
the birthplace of sparkling wine. It was here in the town of Limoux, 150 years before Dom Pérignon was born, that the first case of sparkling wine was documented. Even visitors like Thomas Jefferson loved Limoux’s bubbles, so much so, it was the only sparkling wine Jefferson stored in his personal cellar.
