Farming/Vinification: Maria and Sepp Muster are true pioneers of natural winemaking in Austria. The couple started the project in 2000 when they took over the family winery in Styria. This is a 10-hectare estate that has never had herbicides or pesticides used on it, so it was easily converted to a biodynamic project. Working with the motto “the earth, the sky and wine in the middle” they make wines in a way that maintains the balance between the soil, the plants and the animals.
When the grapes have been harvested manually, half are destemmed in the winery and the Muster Erde vinification process begins in 600-litre wooden barrels with native yeasts. The grapes remain with their skins for about 9 months and then they are transferred into wooden oval tanks where they remain for 20 months. The wine is finally bottled without clarifying, filtering or adding sulphites.
Notes: An eccentric orange wine that’s full of complexity.  Aromas of white fruit, citrus and salty notes. On the palate it reveals ripe fruit with marked tannins, a lively acidity and a very mineral finish. It is presented in a special clay bottle to maintain all the intrinsic properties of the wine.
