🍇 Vermentino grape must

Region: Lodi, California 

Farming/Vinification:  Organic farming practices. Skin-macerated Vermentino grape must (organically farmed Lodi fruit) forms the base of the 2021 Orangette. Water is added to the must and steeped for two days before the addition of unfermented Vermentino juice to assist fermentation. After four months in stainless steel, organic beet sugar and apricot purée are added at bottling to start the second fermentation. No sulfur added. 

Notes: Fresh and clean, tastes like summer! Low ABV, easy drinking. Piquettes are made utilizing the pomace (the dense clumps of grape skins, seeds, stems and pulp that remain after juice has been pressed for wine) left over from winemaking. The word itself comes from the French word for ‘prickle’, an ode to the delicate fizz they contain. In France, piquette is said to have been the preferred drink of vineyard workers at the lunch table, as its low alcohol encouraged post-lunch productivity rather than an alcohol-fueled stupor.
