Region: Sierra Foothills, CA
Farming/ Vinification: Organically farmed St. Amant Vineyard in the Sierra Foothills, the parched inland mountains of California Gold Rush fame. Mike’s method here is particularly inspired: he takes a “full carbonic” approach, placing whole clusters of grapes into sealed vats for six weeks and letting them ferment from the inside out.
Notes: Light, fresh and quaffable. Alpine strawberries, violets, herbs.
