Notes: This is among the hall of fame wineries in Natural Wine. This specifically are made from extremely old vines some planted before World War I. In the cellar, the fruit goes through an extended maceration (15-25 days!), with low temps and no punch downs till the very end. This crates a delicate wine with extreme depth and character. Aromas of sour cherry, violets, and sweet spices. Weightless on the palate, wit’s a tingly impression of minerals.
