Notes: Medium (-) bodied, garnet in color with violet reflect, bit cloudy. Aromas of cherry, black pepper, cinnamon and warm terracotta. Plush, pure and bright, with notes of sour cherry, raspberry, red currant, and wild strawberries, framed by bright acidity and good tannins. Tangy-peppery finish. Serve lightly chilled.
Nestled at 500+ meters, Collecapretta's vineyards are rooted in a diverse soil of calcium- and iron-rich clay with outcroppings of tufo and travertine limestone. The Lautizio family produces only a small number of bottles per year, but take care to craft an array of cuvees that best reflect their vinous terroir. Ciliegiolo grapes, ranging in age from 15 to 50 years, ferment for 10 days on the skins with wild yeasts in open conical vats, before being transferred to cement tanks for aging over winter. February's waning moon marks the first racking, while a second occurs in March, before the wine is bottled in early April free of any sulfur or filtration.
