Cyril Fhal is one of the Roussillon’s, and perhaps France’s, great unheralded winemakers. A few years ago he decided to branch out from usual his monk-like focus on producing wines from his immaculately tended old vines high in the foothills of the Pyrenees and buy fruit from some trusted friends to createÂ
This wine is concrete fermented lines the bottom of the vat with wholecluster grenache noire in order to balance the tendency of syrah to reduce. Wholecluster maceration for 6 days before pressing, and then back into concrete to complete ferment, and aged for 9 months in concrete. Unfined/Unfitlered, low to no added SO2.
