Vinification: This is a mix of juice from a number of different plots that were all pressed separately, including a red and whites with some skin contact. All juice thrown in a tank for 4 months and bottled unfiltered with no sulfur added. From bush-trained vines planted in calcareous clay soils of various ages, the grapes are hand-harvested, undergo vineyard sorting and de-stemmed before spontaneous fermentation begins with ambient yeasts in stainless steel tank. No temperature control, fining, filtering or added sulphur
Our family has been working and living in our property from 1405. We just work with the traditional varieties of Penedes region, such as xarel.lo, macabeo, parellada, monastrell, sumoll, garnatxa blanca and malvasia de sitges. All the property is organic and we produce, wines, oil, honey, vegetables, cereal and eggs.
